Tomato Basil Soup

  • 1/4 cup extra virgin olive oil
  • 2 tsp Thai fish sauce*
  • 1 tbsp crushed fresh garlic
  • 1 1/2 tbsp honey
  • 1 can (14 oz) coconut milk
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14 oz) tomato juice
  • 1/2 tsp crushed chilies
  • 1 tsp salt
  • 1 medium-large sweet onion, diced (2-3 cups)
  • 1 tsp minced fresh ginger
  • Fresh basil leaves as garnish, thinly sliced

Heat the oil over medium-high heat in a heavy 5-quart pot. Add chilies and onions and saute 15 minutes or until soft. Add garlic and saute another minute. Add all other ingredients except coconut milk and simmer 20 minutes, stirring now and then. Add coconut milk. Puree and serve with a garnish of fresh basil.

*Can be purchased at most grocery stores. Thai fish sauce is similar in color and consistency to soy sauce. It has a distinct odor and flavor, but these “disappear” when added to other foods. Thai fish sauce has naturally occurring glutamates that enhance other flavors.
